Strawberry Shortcake Parfait
Googling something along the lines of “what do I do with lemon curd” brings you
eventually to this Strawberry Shortcake & Lemon Curd Parfaits recipe.

The great thing about this idea is that I could use both the
Lemon Curd and the Shortcake
recipes from season one, all in one dessert.

Basically, you layer shortcake/lemon curd/strawberries twice, and then top it all
off with some whipped cream. It’s amazingly delicious.

- First time using a double-boiler!
- I used 2 large lemons in this, got more than 1/3 cup of juice and plenty of zest. If I did this again I'd measure the zest because it was plenty.

- These might have been a bit easier than the biscuits because you don't need to roll them out on the counter -- you can go right from the bowl to the sheet pan.
